Katherine Eileen Mathias was born in Bridgeton, Missouri on September 13, 1999 to Carl and Phuong "Stephanie" Mathias. Her parents, family and friends call her Eileen. She was raised in the Maryland Heights area and attended a Christian elementary and middle school. She attended Christian High School now known as Veritas High School, where she was an honor roll student. She participated in Girl Scouts during her elementary school years and was involved in her local church, Remix Church.  After high school, she went on to study at Rockhurst University, in Kansas City, MO, where she received her doctorate in Occupational Therapy in December 2023.

After a year and a half battle with cancer, she passed away on March 7, 2025. She is survived by her mother, Stephanie, father, Carl, aunts, Dung Tran, Binh Ho, Hien Nguyen, Yen Tran, and Janice Bright, uncles, Quan Tran, Ky Ho, and Randy Bright, and cousins, Son Huang, Linh Tran, Vinh Tran, Henry Tran, Katherine Chu, Steven Chu, Karen Tran, Brandon Ho, Quinton Ho, Alicia Tran, Alanna Tran, Austin Bright, Travis Bright and Hannah Bright.

Funeral at the Ortmann Stipanovich Funeral Home, 12444 Olive Blvd., Creve Coeur, on Friday, March 14 at 6:30 p.m. with visitation from 4 p.m. until time of service.
